Sausage Curry

Serves 4

This sausage curry can be made with either meat or vegetarian sausages and really packs a punch with the flavour. Double up the ingredients and this curry can also be frozen in batches for an easy weekend ‘fakeaway’.

Sausage Curry

Ingredients

2 large onions
2 inch piece of root ginger finely chopped
8 sausages
2 tsps oil
3 tsps garam masala
2 tsps crushed chillies
2 tsps paprika
2 tsps curry powder
1 tin of tomatoes
½ litre stock
2 peppers

Method

Using one tsp of the oil, brown the sausages.

Once browned, remove from the saucepan and then chop into pieces.

Slice the onions and peppers into bitesized pieces and then add these, the ginger and the remaining oil to the saucepan.

Once the onions and peppers have softened slightly, re-add the sausage pieces.

Sausage Curry

Allow the sausages to brown all over.

Then add the spices, tomatoes and stock.

Sausage Curry

Allow to simmer for approximately 25 minutes, until the sauce has thickened.

Sausage Curry

Serve with rice and a delicious naan bread. Who knew sausage curry could be so good? It’s definitely a Saturday night fakeaway favourite in our house, and a Monday, Tuesday….

I know exactly what you mean Nicola. Blogs are so good for inspiration. I often start on a blog for dinner inspiration these days.

Thanks Lynn - it was very yummy. We made it again this weekend just gone and it went down a treat with our guests.

    • Sally Sally says:

Yes we made it with veggie sausages (if you look closely at the picture, you can see they are meat free). It was lovely. It would work well with both.

  2. 'Fakeaway'! I love that!! I'll be using that word from now. Looks like a nice recipe. I much prefer home made curry to the jars of curry paste. Thanks for joining us at #GlobalBlogging

We love a fakeaway. Not just because we are far out from the town and nowhere will deliver, but also because we know what goes into it.
