This sausage curry can be made with either meat or vegetarian sausages and really packs a punch with the flavour. Double up the ingredients and this curry can also be frozen in batches for an easy weekend ‘fakeaway’.
2 large onions
2 inch piece of root ginger finely chopped
2 tsps oil
3 tsps garam masala
2 tsps crushed chillies
2 tsps paprika
2 tsps curry powder
1 tin of tomatoes
½ litre stock
Using one tsp of the oil, brown the sausages.
Once browned, remove from the saucepan and then chop into pieces.
Slice the onions and peppers into bitesized pieces and then add these, the ginger and the remaining oil to the saucepan.
Once the onions and peppers have softened slightly, re-add the sausage pieces.
Allow the sausages to brown all over.
Then add the spices, tomatoes and stock.
Allow to simmer for approximately 25 minutes, until the sauce has thickened.
Serve with rice and a delicious naan bread. Who knew sausage curry could be so good? It’s definitely a Saturday night fakeaway favourite in our house, and a Monday, Tuesday….
