Cinnamon Pancake Recipe

I’ve teamed up with Schwartz to inspire you to try something different for your breakfast. So if you are fed up of cereal or toast, and if you fancy something warming for your breakfast on these colder days, you could try these delicious cinnamon pancakes.

Cinnamon Pancakes

This recipe makes 4 large pancakes. You could either serve up to the whole family or keep them in the fridge and reheat the following morning.

Ingredients

2 ripe bananas
4 large eggs
50g cottage cheese
50g plain flour
1 teaspoon Schwartz cinnamon
½ teaspoon vanilla extract

Cinnamon Pancakes

Method

Mash the bananas in a bowl.

Cinnamon Pancakes

Add all the other ingredients.

Using either a hand or electric whisk, mix all the ingredients together until you get a smooth consistency.

Cinnamon Pancakes

Heat a frying pan on a medium heat.

Add your oil or butter of choice to the heated pan.

Spoon the mixture into the centre of the warm pan and allow to cook through.

Once the pancake bubbles, flip the pancake and cook the other side.

Cinnamon Pancakes

Serve on its own, or with berries of your choice for a healthy, filling and nutritious breakfast.

I’d love to know what you think of these pancakes. I really enjoy these either as a great breakfast or sometimes as a post-dinner treat. Either way, the addition of the cinnamon means they truly taste delicious. If I’m having them for breakfast, I find they keep me filled up right until lunchtime, unlike some other breakfast choices.
